Bisceglie, Barletta-Andria-Trani province, north of Bari.
Harvest Period
From early November to December and anyway at the beginning of veraison (start of fruit ripening).
Extraction Time
Within 12 hours.
Extraction Method
Continuous line with two-phase cold centrifugal extraction. Internal temperature below 27 °C. No filtration, natural decantation and racking, “must oil”. Storage in underground tanks in the dark at controlled temperature to preserve its organoleptic qualities.
Preservation
Store at a temperature between 12 and 18°C, in a cool, dry place, away from sources of light and heat.
Shelf Life
24 months from the date of packaging.
