The Di Niso Family’s 100% Coratina Extra Virgin Olive Oil is a gem of Pugliese tradition. Produced from centuries-old olive groves in Bisceglie, this oil is the result of careful harvesting and cold extraction, preserving its rich organoleptic qualities. With its medium-intense fruity aroma and distinctively herbaceous taste, enriched with hints of almond and artichoke, it offers a perfect balance of spicy and bitter. Ideal raw on salads, bruschettas, and rustic dishes, it is also recommended during weaning for its purity and nutritional quality.

100% Coratina Monocultivar-autochthonous and ancient in the Puglia region. The olive groves owned by the Di Niso family have been cultivated for generations. They are grown in polyconic pots and the age of the plants is over 100 years.

Harvest area
Bisceglie, province of Barletta-Andria-Trani north of Bari, away from main travel routes.

Harvest period
From the beginning of November to December, or at the beginning of veraison (beginning of fruit ripening)

Extraction time
Within 12 hours

Extraction method
Continuous line with two-phase cold centrifugal extraction. Internal temperature below 27 °C. No filtration, natural decantation and decanting, “must oil” Storage underground tanks in the dark at a controlled temperature to preserve their organoleptic qualities.

Store at a temperature between 12 and 18 °C, in a cool and dry place, away from sources of light and heat. Sudden and prolonged drops in temperature can cause the crystallization of the waxes naturally present in extra virgin olive oil and lead to freezing of the product with the formation of small suspended white spheres, this phenomenon does not affect the quality of the oil.

Shelf life
24 months from the date of packaging.

Green color with yellow reflections depending on the bottling period. High fluidity.

Medium-intense fruity category

Herbaceous, with hints of almond and artichoke. Spicy and bitter notes of medium-high intensity; herbaceous aftertaste of almond and artichoke.

Raw to dress salads, tasty bruschetta, soups, grilled vegetables, and frise.
