Produced from centuries-old olive groves in Bisceglie, this oil is the result of careful harvesting and cold extraction, which preserves its rich organoleptic qualities. Cultivar

100% extra virgin olive oil from the ancient, native Coratina variety of the Puglia region. Olive groves owned by the Di Niso family for generations; trees are over 100 years old.

Harvest area

Bisceglie, in the province of Barletta-Andria-Trani, north of Bari, far from major transport routes.

Harvest period

From early November to December, at the start of veraison (the onset of ripening).

Harvesting technique

Mixed: hand-picking, shaking, and beating.

Within 12 hours.

Extraction method

100% Coratina Extra Virgin Olive Oil is produced using the following extraction method: continuous line with two-phase cold centrifugal extraction. Internal temperature below 27°C. Stored in underground tanks in the dark at a controlled temperature to preserve its organoleptic properties.

Storage

Store at a temperature between 12 and 18°C, in a cool, dry place, away from light and heat sources.

Shelf life

18 months from the packaging date.
