Bisceglie, province of Barletta-Andria-Trani, north of Bari.
From early November to December, at the start of veraison (the onset of ripening).
Mixed: hand-picking, shaking, and beating.
Within 12 hours.
Continuous cycle with two-phase cold centrifugal extraction. Internal temperature below 27°C. Stored in underground tanks in the dark at a controlled temperature to preserve its organoleptic properties.
Store between 12 and 18°C in a cool, dry place, away from light and heat sources.

On the palate, it reveals a surprising lightness, while maintaining a balanced body and a pleasant oily texture. The taste is characterised by a light fruitiness, which evolves into a harmonious balance of initial sweetness, followed by bitter and spicy notes of medium intensity, well balanced with each other, reflecting the freshness and quality of the harvested olives.
