Cultivar
100% Monocultivar Coratina, a native and ancient variety from the Apulia region. Olive groves owned by the Di Niso family for generations, cultivated using the polyconic vase method, with trees over 100 years old.
Harvest area
Bisceglie, in the province of Barletta-Andria-Trani, north of Bari, far from major transport routes.
Harvest period
From early November to December, at the start of veraison (the onset of ripening).
Harvesting technique
Mixed: hand-picking, shaking, and beating.
Extraction time
Within 12 hours.
Extraction method
Continuous cycle with two-phase cold centrifugal extraction. Internal temperature below 27°C. Stored in underground tanks in the dark at a controlled temperature to preserve its organoleptic properties.
Storage
Store between 12 and 18°C in a cool, dry place, away from light and heat sources. Abrupt and prolonged drops in temperature can cause the waxes naturally present in extra virgin olive oil to crystallise, leading to the product freezing and the formation of small white spheres in suspension. This phenomenon does not affect the quality of the oil.
Shelf life
18 months from the packaging date.

Green colour with yellow reflections depending on the bottling period. High fluidity.
